| Carrot Cake: |

Preheat oven to 450° F.
8 oz. cream cheese, softened 1/2 tsp. vanilla extract 1/4 cup Confectioners' sugar 1-1/2 cups Granola cereal 12" BOBOLI® Original Italian Pizza Crust* 1 cup carrot, finely shredded 1 cup mixed dried fruit, chopped
1 orange rind, finely chopped 1/2 tsp. ginger, ground 1/2 tsp cinnamon, ground 1/4 tsp. cloves, ground pinch nutmeg, ground 1/4 cup brown sugar 2 tbsp. flour 1 tbsp. butter

Cream confectioners' sugar, cream cheese and vanilla using a mixer or food processor until smooth. Spread over pizza crust leaving a 1" border.
Combine next 8 ingredients. Spoon over cream cheese. Combine last three ingredients. Sprinkle over filling. Bake 8 - 10 minutes on baking sheet in lower 1/3 of oven. Serve for breakfast or as a snack.
Serves 4 - 6.
* For 8" bread shell, use 1/2 ingredients. |
